Healthy Casserole Recipes

Looking for simple, kid friendly casseroles that are healthy?

I was too. For a long time.

As a busy mom with toddlers, I love an easy dinner casserole. But so many of them are loaded with heavy carbs and canned soups containing chemicals…not the cleanest ingredients…

Needless to say, finding a casserole that is healthy AND delicious that successfully feeds the whole family can be a TALL order. But, I finally have a good list!

I am excited to share with you the top 4 casserole dishes that are made in our house. I hope you and your family enjoy them as much as my 5 year old daughter, 3 year old son, husband, and I do!

The 4 Best Kid Friendly Casseroles

The below 4 casseroles are EASY to prep and have HEALTHY ingredients. Healthy in my book is food with no chemicals or industrial seed oils, and there is variety (proteins, fats, fibers, veggies, fruits). And best of all, these casseroles DON’T break the bank.

1. The Easiest Ground Turkey & Zucchini Lasagna, by the Oregon Dietician

What I love about this easy recipe by the Oregon Dietician is that there are NO noodles here. Having the opportunity to eat a tasty lasagna without feeling bloated or loaded up in extra calories is awesome.

This healthy recipe is hands-down one of my kids’ most favorite dinners. The first time they ate it, they both went, “Mmmm! Mom! This is delicious!” (I am not great in the kitchen, so they were pleasantly surprised at how yummy this is, haha).

2. Easy Keto Hamburger Casserole, by Isabel Laessig

I think it’s safe to say most kids love hamburgers, so this one is a real crowd pleaser! It is a wholesome dinner with low carbs that even “picky” eaters will be sure to enjoy. Moreover, it is such an easy meal to prepare!

The ground beef is packed with flavor and the ingredients are simple. Best yet, the dish is a great way to sneak in veggies, like green beans!

My husband (who usually bites into my food with skepticism because of my cooking struggles) went, “Oh, wow! This is really good!” the first time he tried it. 🙂

And my 3 year old son who is in the phase of saying all things new are “yucky”, happily eats this dish 🙂 It is definitely a kid friendly casserole for picky eaters.

3. Cheddar Cheese Herb Chicken, by The Food Dolls

I was reluctant to bake this dish, as it calls for a 4 oz can of mild diced green chiles and paprika…2 flavors I wasn’t sure my kids would tolerate.

But, I was willing to try it with it being a cheesy chicken…I feel like anything covered in cheese is a sure win for most munchkins. And, I am SO glad I tried it!

The spice in this dish is so subtle, and the versatility with the chicken is awesome. My children eat it over noodles while my husband eats it over rice, and I usually just eat the chicken breast by itself.

If you’re not familiar with The Food Dolls, I highly recommend checking out their site! They are 2 sisters who are also moms; their dishes are uncomplicated and nutritious–2 things busy mamas need!

4. Healthy Southwest Chicken Casserole, by The Clean Eating Couple

“Mom! I want this every night for dinner!” That was the response my 5 year old had when she ate this casserole rolled up into a burrito. 🙂

It is one of those easy family casseroles you will love on those busy weeknights because of the simplicity in assembling (not to mention the great flavor, too!).

Being able to successfully feed everyone in your family the same meal where everyone goes for seconds feels so good! And that CAN be done when you make this casserole 🙂
